Soyrizo Slop!

Here's something that we made the other night that was scrumptious and easy to make!

4+ Servings. Less than $6.

1 Package Trader Joe's Soyrizo ($2)
1 Medium, or 2 Small Onion(s) ($0.50)
1/2 Package Trader Joe's Frozen Peppers Mix, or 1-2 Bell Peppers ($1)
1/2 Cup Tomato Sauce (~$0.50)
1 15oz Can Black Beans, Drained (~$1)
1 15oz Can Kidney Beans, Drained (~$1)
1-2 Tbsp Canola Oil for frying
1 tsp Cumin
1/2 tsp Salt. (to taste, also note: the beans we used are "no salt added")

Over medium heat in large frying pan, heat Canola Oil and cook Soyrizo until slightly browned.
Add Onion and Pepper and continue to cook until somewhat soft.
Mix in Tomato Sauce and cook another minute.
Add Beans, Cumin and Salt and bring to boil.
Lower heat and simmer 15-20 minutes, or until beans are desired softness.

Serve over rice (~$1?) and enjoy!

The ingredients.

Adding the peppers & onions.

Pre-bean slop!

The slop finale in the pan.
